The orchards of Villa Valley have no fewer than 400 olive trees.
Of course, this is not enough to sell olive oil on a grand scale, but this is largely sufficient to feel the beauty and warmth of these splendid trees which intoxicate us… and for us to make a few souvenir bottles of "Villa Valley" olive oil.
The symbol of peace, wisdom, and eternity, a generous gift of the gods, the olive tree is an exceptional tree of noble beauty which is truly fascinating.
One tree produces from 15 to 50 kg. of olives on average. Since it takes from 5 to 6 kilos of olives to make one liter of oil, each tree enables us to obtain from 3 to 10 liters of olive oil, depending on the variety. If it is not pruned, an olive tree only bears fruit every other year.
Olive oil is excellent for health given its richness in omega-9, a monounsaturated fatty acid. Its consumption is associated with a reduction in the risk of cardiovascular diseases and a reduction in total cholesterol levels as well as LDL cholesterol (the “bad” cholesterol) in the blood.
It is also rich in polyphenols, antioxidants which slow down cellular aging, as well as vitamins K (blood coagulation and bone density) and E (skin elasticity).
Nonetheless, it contains 100% lipids and thus is rich in caloric content (90 kcal/tbsp., which is more than butter).
Once the olives are collected, numerous phases succeed each other before obtaining this delicious oil which will enchant your taste buds.
Thus, after the harvest, olives are washed in a mill which will gather the leaves. Next follow the grinding of olives, the kneading of the paste, extraction by centrifuge before a final passage through a vertical centrifuge after which it is stored.
